8. Pumpkin Gingerbread
Delicious healthy gingerbread for everyone!

Ingredients:

1 can pumpkin purée

½ cup maple syrup

⅓ cup coconut oil

2 tablespoons dark molasses

2 tablespoons chia seeds, ground

6 tablespoons water

1¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda
-
1 pinch salt
-
½ teaspoon allspice powder
-
¼ teaspoon cinnamon powder

¼ teaspoon ground cardamom
Directions:
Combine the pumpkin purée, maple syrup, coconut oil, molasses, chia seeds, and water in a bowl allow to rest for 5 mins.
Add in the remaining and give it a quick mix.
Add the batter into a loaf pan lined with baking paper or greased with butter.
Bake in an oven at 350°F for 30-40 minutes.
Serve when cool.
