This soup is easy to make, tastes good and is very good for you. Nice and thick, it easily serves as a meal.

1/2 cup chopped onion
1/4 cup butter
4 cups chopped fresh broccoli
2 cans (14 1/2 ounces each) reduced-sodium chicken broth
1 teaspoon garlic powder
1/2 teaspoon pepper
1/4 teaspoon salt
Sour cream, optional
1. In a large saucepan, saute onion in butter until tender. Add broccoli, broth and seasonings. Bring to a boil. Reduce heat; cover and simmer 10-12 minutes or until broccoli is tender. Cool slightly.
2. In a blender, cover and process soup until smooth. Return to the pan and heat through. Garnish servings with sour cream.
