Salted Chocolate Peanut Clusters

Yield: 50 pieces | Prep Time: 15 minutes | Chill Time: 1 hour

These little clusters remind me of my grandmother. I think she bought hers at a local store, but they always seemed homemade. That is what I love about some of my childhood food memories. Just because something was store bought and/or semi-homemade doesn’t mean it was any less special. The way you display or package it up, present it, and eat it, can be just as special as making it. This, however, is a very easy microwave candy, one made from scratch and with a lot of love.

INGREDIENTS

2 pounds white almond bark, broken into 1-inch pieces

1 (4-ounce) bar dark chocolate, broken into 1-inch pieces

12 ounces semisweet chocolate chips

4 cups salted and dry-roasted peanuts

Sea salt for garnish

DIRECTIONS

  1. Line two baking sheets with aluminum foil or parchment paper.
  2. In a large microwave-safe bowl, melt the white almond bark, dark chocolate, and semisweet chocolate chips on 50% power in 30-second increments, stirring in between each, until melted.
  3. Stir in the peanuts. Scoop into clusters and place on the prepared baking sheets. Allow to cool at room temperature until set. Sprinkle with sea salt. Chill for 1 hour. Store in an airtight container in a cool place.
