Oreo No-Bake Cheesecake Bars

Cookies-and-cream is my favorite flavor of ice cream, although it has always been a tough draw between that and vanilla with sprinkles. I don’t eat ice cream as often as I should, and when I make these little bars, I am reminded of that flavor from the summers as a kid when we rode our bikes to a little shop, and I’d emerge triumphantly with a heaping scoop of my favorite treat.

INGREDIENTS

1 (8-ounce) package cream cheese

1 gallon cookies-and-cream ice cream

10 Oreo cookies

DIRECTIONS

  1. In the bowl of a stand mixer fitted with the paddle, combine the cream cheese and ice cream. Beat on high for 5 minutes.
  2. Pour the mixture into a 9-inch cake pan and freeze for 1 hour.
  3. Remove from the freezer and top with crushed Oreos. Dip your knife in hot water before cutting into bars. Serve.
