Healthy Fruit Pizza

Yield: 1 pizza pie; serves 6 to 8 | Prep Time: 15 minutes | Chill Time: 2 hours

I love grilling pizza, and on Saturdays in the summer when that is the star of date night, I often make this fruit pizza to accompany the theme. It is a light and refreshing way to follow up the rich sausage-and-tomato-topped charred dough.

INGREDIENTS

1½ cups cornflakes

1 cup pecans

1/3 cup corn syrup

¼ cup powdered sugar

8 ounces cream cheese, at room temperature

4 ounces Greek yogurt

1 tablespoon orange juice

1 tablespoon granulated sugar, plus more if needed

Assorted fruit for topping

DIRECTIONS

  1. In a food processor, combine the cornflakes, pecans, corn syrup, and powdered sugar. Pulse until combined and the cornflakes and pecans are finely chopped.
  2. Press the mixture into the bottom of a 9-inch springform pan or pie plate to form a crust.
  3. In the bowl of a stand mixer fitted with the paddle, beat the cream cheese, yogurt, orange juice, and granulated sugar until well combined. Taste and add more sugar if you would like.
  4. Evenly spread the cream cheese–yogurt mixture over the crust.
  5. Top with assorted fruits and refrigerate for at least 2 hours. Release from the springform pan or pie plate and slice into wedges to serve.
