Grasshopper Pie

Yield: 1 pie; serves 6 to 8 | Prep Time: 15 minutes | Chill Time: 4 hours

First came the Grasshopper cocktail with crème de menthe, making it green and coining the name. Sometime around the ’60s, the name was handed down to a pie. I love stories like these because most people know what Grasshopper Pie is but never stop to think what a grasshopper has to do with it.

INGREDIENTS

½ (10-ounce) package Grasshopper Mint & Fudge cookies

2 (8-ounce) packages cream cheese, at room temperature

1 (14-ounce) can sweetened condensed milk

3–4 drops green food coloring

1 store-bought (or homemade) chocolate crumb crust

Chopped mint Oreos

DIRECTIONS

  1. In the bowl of a food processor, pulse the cookies into fine crumbs. Reserve ¼ cup of the crumbs for garnish.
  2. In the bowl of a stand mixer fitted with the paddle, beat the cream cheese until smooth. Add the condensed milk and beat until well combined and smooth, about 2 minutes, scraping down the sides and bottom of the bowl once. Add enough food coloring to achieve a light mint green color and stir in the cookie crumbs.
  3. Spoon the filling into the prepared crust and smooth the top.
  4. Sprinkle the reserved crumbs on top with the chopped mint Oreos and cover the pie with plastic wrap. Refrigerate for 4 hours or up to 1 day. Cut into slices and serve.
