Fruity Ice Cream Sandwiches

The crunch of the chocolate graham crackers is a fun alternative to the soft cookie sandwiches you may be used to. And when you fold in fruit, you feel like you’re eating a fruit cup within a delicious summer treat. Try it with berries or bananas: the options are endless.

INGREDIENTS

1 gallon vanilla ice cream

12 chocolate graham crackers

1 (16-ounce) bag frozen mixed fruits, including peaches

DIRECTIONS

  1. Bring the vanilla ice cream out of freezer and allow it to thaw for 5 to 10 minutes. Line a baking sheet with parchment paper.
  2. Lay out 6 chocolate graham crackers on the baking sheet.
  3. Combine the ice cream with the fruit and mix well.
  4. Scoop the fruity ice cream onto the chocolate crackers and top each with another chocolate cracker. Press gently to ensure the crackers don’t break.
  5. Freeze for 1 hour before serving.
