Pineapple Whip

I made this pretty faux ice cream for my friend’s shower, and it became one of my go-tos when hosting a summer soiree. It looks lovely on a dessert table, and I promise it will get consumed before it melts in that hot summer sun it resembles.

INGREDIENTS

1 (15-ounce) can crushed pineapple

1 (8-ounce) container frozen whipped topping, thawed

1/3 cup corn syrup

Yellow food coloring

DIRECTIONS

  1. In the bowl of a stand mixer fitted with the wire whip, beat the pineapple, whipped topping, and corn syrup until combined.
  2. Add enough yellow food coloring to achieve the color you desire, 3 to 5 drops.
  3. Transfer to a freezer-safe container and freeze for 1 hour. Scoop out and serve.
