Dirt Cup

Yield: 8 to 10 dirt cups | Prep Time: 30 minutes | Chill Time: 30 minutes

I teach first graders about healthy eating, and recently when describing root vegetables, I explained that you are eating what is underground in the dirt. One smart kid was eager to remind me that we are not supposed to eat dirt. I asked, “What about dirt cups?” Without a doubt, the class knew what those were! As a child I ate these, and it is fun to see that kids still do. I am determined to keep the worms in and carry on the tradition.

INGREDIENTS

1 (14.3-ounce) package Oreo cookies

1 (8-ounce) package cream cheese, at room temperature

8 tablespoons (1 stick / ½ cup) unsalted butter, softened

1 cup powdered sugar

1 teaspoon vanilla extract

3 cups cold whole milk

2 (3.4-ounce) packages instant vanilla pudding mix

1 (8-ounce) container of whipped topping

DIRECTIONS

  1. In a food processor, pulse the cookies until they look like soil.
  2. In the bowl of a stand mixer fitted with the paddle, beat the cream cheese, butter, powdered sugar, and vanilla until light and fluffy.
  3. In a large bowl, whisk together the milk and pudding mixes for 2 minutes until thickened.
  4. Fold the whipped topping into the pudding.
  5. Fold the pudding mixture into the cream cheese mixture until well combined.
  6. Spoon three-quarters of the crushed cookies and filling into eight to ten 8-ounce glasses, layering along the way. Chill for 30 minutes.
  7. Top with the remaining crushed cookies and garnish with sour gummy worms. Serve.
