These Hungarian crepes are one healthy breakfast option that can be served with powdered sugar and chocolate toppings on the side.
Ingredients (5 servings)
2 large eggs
1 ½ cups milk
1 teaspoon pure vanilla extract
2 tablespoons butter, melted
1 cup all-purpose flour, sifted
2 tablespoons sugar
Dash of salt
2 tablespoons sunflower oil
Cottage Cheese Crepes
2 cups of cottage cheese
1 teaspoon cinnamon
A drizzle of maple syrup
An assortment of fresh berries
Icing sugar
Preparation
Beat the eggs with milk, vanilla extract, butter, all-purpose flour, sugar, and salt in a bowl. Set a griddle on low heat and add 1 tablespoon sunflower oil. Pour ¼ cup batter into the griddle and swirl the batter around, then cook for almost 1 minute per side. Cook
more crepes using the remaining batter in the same way. Transfer the crepes to the working surface. Top the crepes with cottage cheese and cinnamon. Roll the crepes and transfer to a baking pan. Bake the crepes for 20 minutes at 275 degrees F in the oven. Garnish with maple syrup, berries, and sugar. Enjoy.
