Ingredients (8 servings)
2 (¼ ounce) packages active dry yeast
Warm water, as required
¾ cup white sugar
½ cup shortening
1 ½ tablespoons shortening
½ cup butter, melted
5 egg yolks
1 egg
2 teaspoons vanilla-butternut flavoring
1 teaspoon ground nutmeg
1 teaspoon salt
8 cups all-purpose flour
2 cups warm milk
6 egg whites
8 cups chopped pecans
¾ cup white sugar
½ cup honey
1 teaspoon vanilla extract
Preparation
Mix the yeast with warm water in a bowl, and then leave it for 5 minutes. Stir in the sugar, egg yolks, butter, shortening, egg, nutmeg, salt, and vanilla-butternut flavoring in a mixing bowl. Beat this mixture with an electric mixer until creamy. Stir in the yeast mixture, milk, and flour, then mix well until it makes dough. Cover and leave this dough for 1 hour, then divide the dough into 4 pieces. Beat the egg whites in a mixing bowl until it forms stiff peaks. Stir in the honey, vanilla extract, sugar, and pecans, and then mix well. Spread each dough piece into ¼ inch thick- 13x18 inch rectangle on a working surface. Top the dough rectangles with the pecan mixture and roll them. Place the rolls on a baking sheet and bake them for 45 minutes in the oven.
