Fisherman’s Soup (Halaszle)

Have you tried the Hungarian fisherman’s soup before? Well, now you can enjoy this unique and unique combination at home.
Ingredients (6 servings)
2 whole perch, filleted, diced, head and bones
¼ cup olive oil
2 onions, chopped
1 green capsicum, chopped
3 tomatoes, peeled, chopped
2 tablespoons Hungarian sweet paprika
Sour cream, parsley, and white bread, to serve
Preparation
Sauté the fish heads and bones in 1 tablespoon oil in a cooking pot over medium heat for 2 minutes. Pour 13 cups of cold water on top and cook the fish on a simmer for 30 minutes. Strain the broth and discard the solids. Sauté the capsicum and onions with oil in a large saucepan for 4 minutes. Stir in the tomatoes and cook for almost 5 minutes. Add the paprika and cook for almost 1 minute, then add the stock. Put on the lid and continue cooking for about 40 minutes on a simmer. Add the black pepper, salt, and fish pieces, and then cook for almost 10 minutes. Garnish with parsley and sour cream. Serve warm.
