Hungarian Apricot Kolaches

Ingredients (12 servings)
8 ounces cream cheese, softened
1 cup butter, softened
2 ¼ cups all-purpose flour
½ teaspoon salt
1 cup apricot preserves
¼ cup sanding sugar
Preparation
Beat the cream cheese with butter in a bowl until fluffy, and then stir in the salt and flour. Mix well and divide the dough into 4 equal portions. Layer a baking sheet with parchment paper. Spread each dough portion into a ⅛ inch thick sheet and cut into 2-inch squares. Add a tablespoon of apricot preserves at the center of each square. Bring in the corner of each square and pinch them together. Dust the cookies with sugar. Place them on a baking sheet, and then bake for 12 minutes until golden brown. Allow them to cool. Serve.
