Ceviche is in most cases raw white fish with chopped jalapeños, cilantro and onions tossed in lime juice with salt. Ceviche may also include other mariscos (seafood) such as calamari, crab, lobster, octopus or shrimp; however, these ingredients are usually cooked. The dish may be served with corn tortilla chips.

Queso Fundido is another variety of Mexican cheese dip. Cheese is melted together with butter and served in a hot ceramic dish. It may include sliced vegetables such as bell peppers, onions and tomatoes. Sometimes chorizo (Mexican pork sausage) may be added. It is usually served with corn tortilla chips or plain hot tortillas.
