Posole is a traditional, spicy Mexican soup. Although there are many recipes, most follow these guidelines: chunks of pork are simmered in fresh chicken stock with garlic, hominy, onions, chile peppers and tomato. With the exception of hominy, the other ingredients will likely be sautéed in oil prior to being added to the soup. It can be seasoned with azafran (Mexican saffron), chile powder, cilantro, Mexican oregano or any other Mexican herbs and spices.

Sopa Azteca may also be called tortilla soup on some restaurant menus. Most are similar in preparation with garlic, onions, sliced chicken and tomatoes simmered in fresh chicken stock and lime juice. The soup is often topped with crunchy corn tortilla strips and grated cheese. Some recipes call for a greater variety of vegetables and may also include cream.
