Huevos Mexicanos are scrambled eggs with chopped chile, onions and tomatoes. Eggs are usually cooked with vegetable oil or occasionally butter. They are often served with steamed tortillas and beans, which may be topped with cheese. Salsa picante (puréed tomatoes, chile, garlic, onions and cilantro) or pico de gallo (a fresh salsa consisting of tomatoes, onions, garlic, jalap-enos and cilantro) may be offered on the side.

Huevos Rancheros consist of eggs fried in vegetable oil or occasionally butter. They are usually sunny side up, on top of a corn tortilla that has been lightly fried in vegetable oil. The eggs are topped with chile con carne (meat simmered in red or green chile) and cheese. Chopped lettuce, onions, tomatoes, beans and pico de gallo may also accompany the dish.
