Black pudding griddle cakes
Makes 8–10 small pancakes
250 ml (9 fl oz/1 cup) black pudding mixture
1 egg
1 tablespoon plain (all-purpose) flour
butter, for frying
Mix the black pudding mixture with the egg and flour and stir well to combine. Put a pancake pan or griddle iron over medium heat and melt a knob of butter. Pour in the mixture one generous tablespoonful at a time and fry the pancakes on both sides. Serve with melted chocolate sauce, or stewed cherries.
