muesli bars
These are packed with nuts, dried fruits, and cereal. You can be flexible with the ingredients, and add your favorite nuts or dried fruits.
- 2 sticks plus 6 tablespoons unsalted butter
- 1 cup light corn syrup
- 1 cup packed light brown sugar
- 2 cups rolled oats
- 1⅓ cups desiccated coconut
- ¾ cup dried apricots, finely chopped
- ⅓ cup dried dates, finely chopped
- 1¼ cups cornflakes
- ¾ cup sunflower seeds
- ½ cup dried cranberries
- ¾ cup shelled walnuts, chopped
- ¾ cup raisins
a 13 x 9-inch baking pan, lined with parchment paper
Makes about 12–15 portions
Put the butter, corn syrup, and sugar in a large saucepan over medium heat and heat until melted and smooth, stirring occasionally.
Put the oats, coconut, apricots, dates, cornflakes, sunflower seeds, cranberries, walnuts, and raisins in a large bowl and stir with a wooden spoon until everything is evenly mixed. Pour in the butter mixture and mix thoroughly until everything is well mixed and the dry ingredients are evenly dispersed.
Press this mixture into the prepared baking pan, using a tablespoon to flatten and compress it. Cover with a sheet of parchment paper, then a tray covered in jam jars or cans to apply pressure on the cake and compress it more. Let cool, then refrigerate overnight.
