rocky road bars
Like the Chocolate Icebox Cake Bars, these Rocky Roads don’t require baking. You can use any of your favorite chocolate bars. For cute, individual servings, scoop the mixture into muffin cases before refrigerating.
- 1 lb. 8 oz. milk chocolate, roughly chopped
- 8 regular-sized chewy chocolate bars of your choice (such as Snickers and Mars), roughly chopped
- 1 cup marshmallows
- 1¼ cups chocolate malt balls
- ⅔ cup dried apricots, roughly chopped
- ⅔ cup raisins
- 1 cup cornflakes
- 100 g chocolate jimmies
a 13 x 9-inch baking pan, lined with parchment paper
Makes about 18 generous portions
Put the milk chocolate in a large saucepan over medium heat and heat until melted and smooth, stirring occasionally.
Put the chocolate bars, marshmallows, malt balls, apricots, raisins, and cornflakes in a large bowl and pour in the melted chocolate. Mix with a wooden spoon until everything is well mixed and the dry ingredients are evenly dispersed.
Press this mixture into the prepared baking pan, using a tablespoon to flatten and compress it. Sprinkle the chocolate jimmies all over the top. Let cool completely, then cover and refrigerate overnight.
