Mini Quiches

Mini Quiches are perfect as breakfast on the go or as a wonderful cocktail party snack. To vary the ingredients, try using Cheddar cheese instead of Jarlsberg, and chopped cooked bacon instead of prosciutto or ham.

Ingredients

Serves 12

Nonstick cooking spray, as needed

1 (16-ounce) package gluten-free pie crust mix

2 large eggs

12 cup grated Jarlsberg cheese

14 cup minced prosciutto or smoked ham

23 cup heavy cream

18 teaspoon grated nutmeg

2 tablespoons minced fresh chives

Freshly ground black pepper, to taste

  1. Preheat oven to 325°F. Spray a 12-cup mini-muffin pan with nonstick spray.
  2. Prepare the pie crust mix according to box directions. Roll out thinly. With the floured rim of a juice glass or a 2" biscuit cutter, cut dough into 12 rounds and line the muffin cups with dough.
  3. Pulse the remaining ingredients in a food processor until combined.
  4. Fill the cups 34 full with the cheese mixture.
  5. Bake for about 10 minutes, or until set. Let rest for 5 minutes. Carefully lift the quiches from the cups. Serve warm.
