Caesar Dressing

True Caesar salad dressing has a touch of anchovy, lemon, and mustard.

Ingredients

Makes 1 cup

14 cup red wine vinegar

1 large (pasteurized) egg

1 clove garlic, mashed

1 tablespoon lemon juice

12 teaspoon dry mustard

12 teaspoon anchovy paste

Salt and ground black pepper, to taste

14 cup grated Parmesan cheese

14 cup extra-virgin olive oil

Which Olive Oil Is Best?

Extra-virgin olive oil comes from the first pressing of the olives, has the most intense flavor, and is the most expensive. Use this for salads and for dressings and dips. Virgin olive oil is from the second pressing. Less expensive than extra-virgin, it can be used for the same purposes. “Olive oil” indicates that it is from the last pressing; this is the oil used for cooking since it does not burn as easily at high temperatures.

  1. In a blender, blend vinegar, egg, garlic, and lemon juice until puréed. Add mustard, anchovy paste, salt, pepper, and cheese.
  2. With the blender running on medium speed, slowly pour in the olive oil in a thin stream.
