Cashew avocado garlic sauce

Ingredients:
- 2.5 oz raw, unsalted cashews
- 1 ripe avocado, peeled, pitted and diced
- 1 clove garlic, sliced
- 1 tsp fresh lemon juice
- 2-3 fl oz water
- sea salt and freshly ground black pepper to taste
Instructions:
- Soak cashews in hot water for about 2 hours. Drain and rinse.
- Place all ingredients in a food processor or blender bowl, add water and puree until very smooth.
- If the sauce is too thick, add more water and blend again.
