What’s your fridge style? My fridge is always organized with lots of fruit.

There is a lot of empty space in there—do you live alone? Yes, I’m separated. I have three kids and three grandkids.

This is a very healthy fridge for a bachelor. Do you eat healthy all the time? Even late at night? Yes, mostly. I come home round 11:30 p.m. or midnight. I’ve already had dinner so maybe a persimmon for a late-night snack. Or maybe a yogurt or some milk chocolate before I go to bed. I know, the last is the worst just before bed!

Anything we would never see in your fridge? Anything with genetically modified ingredients.

That sounds a little less virtuous, though you seem to drink a lot of water. I drink two to three Fiji each day. It has lots of silica. I also have lots of juice from ABC.

What types of juice? A green juice of green apple, kale, spinach, jalapeño, and celery. The red is beet, carrot, ginger, and orange. And a turmeric tonic with fresh turmeric, water, sea salt, lime juice, and honey. With the stress we have in the kitchen, the last one is a good remedy when I come home.

What is always on tap in your fridge? Some Champagne, tonic water for gin and tonics—I always have vodka, gin, and Campari. But we had a lot of Negronis last night!

What do you serve when you entertain? Most often it’s ham or saucisson sec.

Any food you really miss from Alsace? My mother’s cooking, especially her choucroute. And my favorite childhood dish, baeckoffe.

What do you cook on the weekends? I pick up seasonal fruits and vegetables at the farmers market before going to the country, where I spend most of my weekends with my family. Being that most of us are in the industry, everyone gets involved with the cooking. My son Cedric is usually at the grill, Philippe helps me in the kitchen. We serve everything family style. They all love my breakfasts, especially my pancakes.

Do you ever order takeout? I am not really one to order takeout. I sometimes order from Perry Street and bring it up to my apartment.
