11/2 tablespoons extra-virgin olive oil
1/2 cup chopped red onion
2 (4-ounce) smoked pork chops
11/2 cups shredded red cabbage
1/2 cup peeled and chopped Granny Smith apple
1/2 cup apple juice
1/4 teaspoon dried thyme
1/4 teaspoon sea salt
1/8 teaspoon freshly ground black pepper
1. Heat olive oil in a large skillet over medium heat. Add onion; cook and stir 3–4 minutes until crisp-tender. Add pork chops; brown on both sides about 3 minutes. Add cabbage and apple to the skillet; cook and stir 3 minutes.
2. Pour apple juice over all and sprinkle with thyme, salt, and pepper. Bring to a boil, then reduce heat to medium, cover, and simmer 10 minutes until cabbage is crisp-tender and pork chops are hot and tender. Serve immediately.
