INGREDIENTS

2 (4-ounce) boneless pork loin chops
2 cloves garlic, finely chopped
1 teaspoon ground cumin
1/4 teaspoon dried oregano
1/2 teaspoon sea salt
1/8 teaspoon cayenne pepper
1 tablespoon extra-virgin olive oil
2 tablespoons orange juice
11/2 tablespoons lime juice
1. Trim excess fat from pork chops. In a small bowl, combine garlic, cumin, oregano, salt, and cayenne pepper and mix well. Sprinkle this mixture on both sides of chops and rub into meat. Let stand at room temperature 10 minutes.
2. Heat olive oil in a heavy saucepan over medium heat. Add pork chops and cook 5 minutes. Carefully turn and cook 5 minutes on second side. Add orange juice and lime juice and bring to a simmer.
3. Cover pan and simmer chops 5–10 minutes or until pork chops are tender and just slightly pink in the center and sauce is reduced. Serve immediately.
