HOISIN-GLAZED SHRIMP

INGREDIENTS

Serves 2


2 tablespoons peanut oil

1 pound raw jumbo shrimp, peeled and deveined

1 teaspoon chopped fresh ginger

1 tablespoon soy sauce

Juice of 1 medium lemon

1 tablespoon hoisin sauce

1. In a medium heavy sauté pan or wok, heat the oil over medium-high heat until barely smoking. Add the shrimp and ginger and sauté about 2 minutes.

2. Add the soy sauce and lemon juice and cook 1 minute.

3. Add the hoisin and sauté 1 more minute or until the shrimp are well coated and fully cooked. Serve hot over rice if desired.
