Grease the skillet with oil & add the sweet potato cubes. Season with the cinnamon and garlic powder and sauté for 3 minutes.
Add the spinach & cook for 1 min more.
Crack the eggs on top and season with salt and pepper. Cover with a lid for 2 minutes to cook the eggs.
Serve.
