Cheesy Stuffed Peppers

Ingredients:

1/3 pound ground beef, lean

1/9 cup white onion, chopped

1 clove garlic, minced

5 ounces canned roasted tomatoes

¼ cup long-grain white rice, uncooked

2/3 cup beef broth

2/3 tablespoon tomato paste

1/6 teaspoon dried basil

½ cup cheddar cheese
-
1/3 tablespoon vegetable oil

Salt and pepper to taste
Directions:
Heat oil in the skillet & add the white onion. Cook for 2 minutes and add the beef. Cook until brown and season with spices, salt, and pepper.
Add in the green pepper & garlic and sauté for 2 minutes more.
Add the beef broth, rice, tomato paste, and roasted tomatoes to the skillet. Reduce the heat & cook with the lid for 15 to 18 minutes.
Top with cheddar and cover with the lid. Cook for 2 minutes. Serve.
