Chicken and Zucchini Couscous
A veggie-filled meal with couscous.

Heat the oil in the skillet.
Add chicken and cook for 5 to 10 minutes, or until browned.
Add the onion and cook for 3 to 5 minutes.
Stir in the garlic, carrot, zucchini, squash, and cherry tomatoes. Cook for 5 to 10 mins/until the vegetables start to soften.
Add the broth, couscous, cumin, cinnamon, turmeric, and seasoning salt and mix well. Move to low heat.
Cook for 3-5 mins/until the mixture starts to boil. Cover and remove from the heat.
Let it sit for 5 mins. Add salt & pepper to taste and serve hot.
