This mild, smooth-textured pudding will be welcome for someone having trouble swallowing or a sore mouth. For more sweetness, you can add another tablespoon of sugar. See page 179 for a refreshing strawberry version.

1 (¼-ounce) package gelatin powder
¼ cup cold water
1 cup milk
½ cup granulated sugar
1 cup plain Greek yogurt
½ teaspoon vanilla extract
In a bowl, sprinkle the gelatin over the water and stir to dissolve. Set aside for 10 minutes.
Meanwhile, in a small saucepan over medium heat, combine the milk and the sugar. Bring to a simmer, swirling the milk until the sugar completely dissolves.
In a blender, combine the yogurt, vanilla, gelatin, and milk and process until smooth. Divide among four juice glasses. Refrigerate for 2 or more hours, or until firm.
