This homemade frozen yogurt bark is ideal when you want something sweet to suck or nibble on for relief. Slightly sweetened, protein-rich Greek yogurt is mixed with fruit purée for a creamy chilled treat. Letting the fruit macerate first produces a syrupy mixture that blends easily into the yogurt, flavoring it throughout. You can also add plain chopped fresh fruit or berries into the honey-sweetened yogurt mixture for more pronounced flavor and different textures.
Use your favorite fruit or berry or a combination (packages of frozen assorted berries are handy to keep in your freezer for this and for the Strawberry-Blueberry “Mocktail” on page 228).
If room is tight in your freezer, use a small rimmed sheet, like one used in a toaster oven.
Hold the pieces with parchment paper or a napkin for easy eating.

1 cup fresh or frozen blueberries, defrosted
1 tablespoon granulated sugar
1 cup plain Greek yogurt
1 to 2 tablespoons honey
½ teaspoon vanilla extract
Pinch salt
Line a small, rimmed baking sheet with parchment paper.
In a bowl, combine the berries and sugar. Set aside for 15 to 30 minutes, or until the berries soften and juices form. Transfer to a blender and blend until smooth. Strain the mixture through a fine mesh sieve into a container or bowl, pushing down with a spoon to extract all the liquid. Add the yogurt, 1 tablespoon of the honey, vanilla, and salt and stir to combine. Taste and add honey, if desired.
Pour into the center of the prepared sheet and spread ¼-inch thick. Freeze for 3 or more hours, or until firm. Break into pieces to serve.

For the family (or when the side effect has resolved), mash the fruit instead of blending it to keep some pieces of fruit in the bark. You can also top the mixture with chopped pistachios or almonds or toasted coconut before freezing for added texture and flavor. With these additions, this recipe would also be good for constipation. |
