Easy Aïoli

VARIATIONS

Add 2 tablespoons of chili powder.

Add 1/4 cup pureed roasted red bell peppers.

Add 2 tablespoons grainy mustard.

Pair brightly flavored sausages like Provençal Chicken Sausage or Porchetta-Style Sausage with a south-of-France inspired garlicky mayonnaise.

11/2 cups mayonnaise

6 garlic cloves, minced

3 tablespoons freshly squeezed lemon juice

2 tablespoons Dijon mustard

Salt and freshly ground black pepper to taste

Combine mayonnaise, garlic, lemon juice, and mustard in a mixing bowl. Whisk well, and season to taste with salt and pepper. Refrigerate until ready to use.

Note: The sauce can be refrigerated up to 4 days.
