Sweet and Hot Mustard Sauce

VARIATIONS

Add 2 to 3 tablespoons ketchup.

Substitute 1 chipotle chile in adobo sauce, finely chopped, for hot red pepper sauce.

The combination of brown sugar, vinegar, and hot sauce creates a sauce that is perfect with all American sausages and sausages made with fruits, such as Thanksgiving Turkey Sausage and Breakfast Sausage with Dried Fruit.

1/4 cup firmly packed dark brown sugar

2 tablespoons cider vinegar

1/2 cup Dijon mustard

1/4 cup grainy mustard

1/4 to 1/2 teaspoon hot red pepper sauce

Salt and freshly ground black pepper to taste

Combine brown sugar, vinegar, Dijon mustard, grainy mustard, and hot red pepper sauce in a mixing bowl. Whisk well, and season to taste with salt and pepper. Refrigerate until ready to use.

Note: The sauce can be made up to 3 days in advance and refrigerated, tightly covered.
