Ingredients:
For the noodles:
6 Zucchinis
Salt
For the meatballs:
3 lbs ground beef
¼ cup finely chopped spinach
2 tbsp finely diced onion
1 tsp garlic salt
Pepper and salt
Oil
Pasta sauce of your choice
Directions:
1. To make the noodles; wash the zucchini then julienne slice them with a mandolin slicer. Don’t slice the part with the seeds because they make the noodles break.
2. Pour the zucchini noodles into a colander then place it over an empty bowl. Add salt then let it stand for some minutes, this will helps the zucchini release moisture. Now dry off the noodles.
3. Transfer the noodles to a pot filled with water then place the stove. Bring to a boil for about 1 to 2 minutes. Make sure you don’t over-cook the noodles.
4. To make the meatballs; combine the ground beef, onion, spinach garlic, pepper and salt in a bowl.
5. Mix everything together with your hands until well combined.
6. Mold the mixture into small meatballs about 1 to 2" inches in diameter then put it on a plate
7. Heat up oil in a pan over medium or med-high heat while molding the meatballs.
8. Put the meatballs in the hot oil and brown all sides.
9. Transfer the browned meatballs to your slow cooker then pour any sauce of your choice over it.
10. Cover the cooker then cook for 4 to 5 hours on low.
11. Serve saucy meatballs over zucchini noodles. Enjoy!
