Low-Carb Eggplant Ground Beef Casserole

Prepare a healthy and delicious casserole made with ground beef, eggplant, tomato, cheese and a crust of hamburger. Yummy!

Preparation time: 10 minutes

Cooking time: 4 hours

Servings: 12

Ingredients:

2 lbs ground beef

2 cups cubed eggplant

1 tbsp olive oil

Dash of salt

2 tsp salt

½ tsp pepper

2 tsp Worcestershire sauce

2 tsp mustard

28 oz. canned chopped tomatoes, drained

16 oz. canned tomato sauce

2 cups mozzarella cheese, grated 

2 tbsp parsley

1 tsp oregano

Directions:

1. Pour the cubed eggplant into a colander then sprinkle with salt. Let it sit for about 30 minutes then transfer to a bowl then stir in the olive oil.

2. Mix the ground beef with pepper, Worcestershire sauce, salt and mustard then press it on the bottom and sides of your 9 by 13 slow cooker pan.

3. Place the eggplant cubes on top of the meat.

4. Top the eggplant with tomatoes and sauce then the remaining ingredients on top.

5. Cover then cook on low for 3 to 4 hours or for 2 to 3 hours on high.
