Bored with the usual pork chops? Then, this melt-in-your-mouth pork chops would be a dinner that the whole family will enjoy.

Ingredients:
2 lb pork, sliced into smaller chunks
2 tomatoes, finely diced
2 tbsp. olive oil
1 red pepper, seeded, diced
2 garlic cloves, crushed
4 jalapenos pepper, diced and seeded
8 oz. mushrooms, quartered
¼ cup onion, sliced
1 yellow pepper, diced, seeded
2 tsp ginger, minced
Salt and pepper, to taste
2 tsp cumin, ground
Directions:
1. Season the pork properly with salt and pepper and then heat a medium sized skillet over medium heat.
2. Once it is hot, add the seasoned pork and cook with stirring until it is browned all over.
3. After that, transfer the browned pork into the slow cooker.
4. Now, sauté garlic, peppers and mushroom in hot oil in the skillet until they are softened and then transfer to the slow cooker.
5. Next, toss the onion and tomatoes into the pot. Add ginger and cumin and cover the slow cooker.
6. Cook for 6 to 8 hours on low heat or until the pork becomes tender.
