How about a comforting lentil soup with sausage and lots of seasonings to keep you warm during the cold winter days?

Ingredients:
1 ½ lb Italian sausage
2 tbsp. red wine vinegar
5 cups chicken broth
1 cup heavy cream
2 tbsp. butter
1 celery rib, diced finely
2 tbsp. olive oil
3 tbsp. garlic, finely minced
1 ½ cup lentils, rinsed thoroughly
½ cup parmesan, grated
½ cup onion, finely diced
1 leek, rinsed and trimmed
½ cup carrots, diced finely
salt and pepper, to taste
2 tbsp. dijon mustard
1 cup spinach, packed
Directions:
1. Heat your slow cooker on low heat.
2. Stir the lentils and chicken broth into the slow cooker.
3. Next, heat a medium sized skillet over medium high heat then add the sausages and cook in olive oil and butter until browned.
4. Once sausages are browned, transfer them to the slow cooker while reserving the oil in the skillet.
5. Now, sauté the remaining vegetables in the skillet along with the seasoning over medium high heat and cook for 10 min or until tender.
6. Toss the sautéed vegetables also into the slow cooker and stir gently to combine.
7. Add the heavy cream, red wine vinegar, parmesan cheese and Dijon mustard.
8. Cover the slow cooker and cook on low heat for 7 to 8 hours.
