Chewy Granola Bars

Granola bars have been a go-to snack for decades. It’s easy to buy granola bars, but making your own is cheaper, and the bars taste even better. These bars are rich with chocolate chips and nuts. This recipe makes a bunch, and they freeze really well.
Nonstick baking spray
3 cups old-fashioned rolled oats
2 cups crisp rice cereal
¾ cup whole wheat flour
½ cup packed light brown sugar
½ teaspoon sea salt
12 tablespoons (1½ sticks) butter, melted
¾ cup honey
⅓ cup almond butter
1 tablespoon vanilla extract
1 cup mini chocolate chips
1 cup chopped pecans

Preheat the oven to 350°F. Line a 9-by-13-inch baking dish with foil and coat the foil with baking spray. Set aside.

In a large bowl, combine the oats, cereal, flour, brown sugar, and salt and mix well. Add the melted butter, honey, almond butter, and vanilla and stir until thoroughly combined. Add the chocolate chips and pecans.

Press the mixture into the prepared pan, making sure to press firmly.

Bake the bars for 15 to 18 minutes, until the bars are set. Cool in the pan on a wire rack.

When cool, cut into 20 bars and wrap each in plastic wrap before storing in an airtight container at room temperature up to 5 days.
Variation: To make these bars gluten-free, substitute any commercially available gluten-free flour mix for the whole wheat flour.
