Mashed potatoes are true comfort food, and everyone should know how to make them. But most recipes tell you to peel and cube potatoes, then boil them until tender, and this takes a long time. This recipe uses diced frozen potatoes that are boiled, then mashed with cream and butter, for a much easier version.
1 (24-ounce) package frozen diced potatoes
4 tablespoons (½ stick) butter
1 cup light cream
⅓ cup sour cream
½ teaspoon sea salt
⅛ teaspoon freshly ground black pepper

Bring a large pot of water to a boil. Add the frozen diced potatoes. Bring the water back to a boil, then reduce the heat and simmer for 10 to 15 minutes, until the potatoes are soft. |

Drain the potatoes and return them to the hot pan. Cook over low heat for 1 to 2 minutes, stirring constantly, until the steaming stops to dry the potatoes. |

Remove the pot from the heat and add the butter. Use a potato masher to mash the potatoes. Beat in the light cream, sour cream, salt, and pepper until smooth. Serve. |
Variation: You can dress up these mashed potatoes by adding other ingredients, such as crisp bacon, chopped scallions, or shredded cheese.
