If there were a contest for easiest recipe in this book, this one takes the cake. And it’s one of my go-to recipes to make because, let’s be honest, there are always those nights when cooking just isn’t in the cards. So instead of ordering takeout, try whipping up this simple salad instead. It has layers of great flavors and textures, including a slightly sweet and creamy poppy seed dressing, and comes together in 15 minutes or less.
make the poppy seed dressing In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon, poppy seeds, salt, and pepper. Taste and adjust the seasoning with more salt and pepper, if desired. Set aside.
make the salad In a large bowl, combine the greens, grapes, apples, and walnuts. Drizzle with your desired amount of dressing and toss until everything is evenly coated. Add the tuna and give the salad one final gentle toss.
