LEMON-FOLDOVERS COFFEE CAKE
prep 50 minutes stand 10 minutes rise 1 hour 30 minutes bake 25 minutes at 350°F cool 10 minutes
1. In a large bowl stir together the warm water and yeast. Let stand 10 minutes or until foamy. Lightly beat the eggs. Add eggs and the next five ingredients (through salt) to yeast mixture; mix well.
2. Gradually beat in 2½ cups of the flour with a mixer on low (dough will be soft and slightly sticky). Beat on low 5 minutes more. Stir in as much of the remaining flour as you can to make a moderately soft dough (dough will still be slightly sticky). Cover; let rise in a warm place until double in size (about 1 hour).
3. Meanwhile, combine the ½ cup granulated sugar, the lemon zest, and orange zest; mix well, pressing with the back of a spoon to release oils from zest. Line a 13×9-inch baking pan with foil, extending foil over edges of pan; grease foil.
4. Punch dough down. Turn dough out onto a lightly floured surface. Roll dough into an 18×12-inch rectangle. Cut into eighteen 4×3-inch rectangles. Spoon a slightly rounded teaspoon of lemon curd into the center of each rectangle. Moisten the edges with water. Fold in half diagonally to make triangles; press edges to seal.
5. Arrange the foldovers in the prepared pan in two lengthwise rows of nine, making sure sealed corners of the triangles point up. Drizzle with ¼ cup melted butter. Sprinkle with sugar mixture. Cover; let rise in a warm place until nearly double in size (about 30 minutes).
6. Preheat oven to 350°F. Bake 25 to 30 minutes or until golden. (If needed, cover with foil the last 10 minutes to prevent overbrowning.) Cool in pan on a wire rack 10 minutes. Use foil to lift coffee cake out of pan. Drizzle with Lemon-Cream Cheese Icing. Serve warm.

LEMON-CREAM CHEESE ICING In a bowl beat 2 oz. softened cream cheese, 1 Tbsp. milk, 1½ tsp. lemon juice, and ½ tsp. vanilla with a mixer on medium until smooth. Beat in 1¼ cups powdered sugar. If needed, beat in additional powdered sugar to make icing drizzling consistency.
