PUFFED OVEN PANCAKE WITH GLAZED APPLES

Apples or bananas? Take your pick! If bananas are your preference, heat the brown sugar and butter together until melted, then stir in three sliced bananas. Stir them gently until heated, then add the rum.
- 2 Tbsp. butter
- 4 eggs
- ⅔ cup all-purpose flour
- ⅔ cup milk
- ¼ tsp. salt
- ½ cup butter, cut up
- 2 medium cooking apples, cored, peeled, and thinly sliced (about 2 cups)
- ⅓ cup packed brown sugar
- 2 Tbsp. light rum or apple juice
- Powdered sugar (optional)
1. Preheat oven to 400°F. Place the 2 Tbsp. butter in a 13×9-inch baking pan. Place pan in oven 3 to 5 minutes or until butter is melted.
2. In a bowl beat eggs with a wire whisk. Whisk in flour, milk, and salt until smooth. Immediately pour batter into the hot pan. Bake 20 to 25 minutes or until puffed and well browned.
3. Meanwhile, for glazed apples, in a large skillet melt the ½ cup butter over medium heat; add apples. Cook and stir about 8 minutes or until apples are tender. Stir in brown sugar; cook 1 to 2 minutes or until sauce is smooth, stirring gently. Remove skillet from heat. Carefully stir in rum. Return skillet to heat; heat through.
4. Serve glazed apples over pancake. If desired, sprinkle lightly with powdered sugar. Serve warm.
