This classic rich combo eats like bread pudding. Get the best flavor by using dark rum and perfectly ripe bananas.
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1½ tsp. baking powder
- ½ tsp. salt
- ½ cup butter, melted
- ½ cup milk
- ¼ cup dark rum or milk
- 1 tsp. vanilla
- 4 medium bananas, peeled and sliced
- ½ cup raisins
- 1 cup rolled oats
- ¾ cup packed brown sugar
- ½ cup all-purpose flour
- ½ cup butter, cut up
- ½ cup chopped walnuts, pecans, or macadamia nuts
- Vanilla bean ice cream (optional)
1. Preheat oven to 375°F. Grease a 3-qt. rectangular baking dish.
2. In a bowl stir together the first four ingredients (through salt); add melted butter, milk, rum, and vanilla. Stir until smooth. Spread batter in the prepared baking dish. Top with sliced bananas and raisins.
3. In a large bowl combine oats, brown sugar, and the ½ cup flour. Using a pastry blender, cut in the ½ cup butter until mixture resembles coarse crumbs. Stir in nuts. Sprinkle crumb mixture over batter.
4. Bake 25 to 30 minutes or until browned and set. Cool in pan on a wire rack 30 minutes. If desired, serve warm with ice cream.
