As I strolled through the tailgate scene at the Brookhill Steeplechase in Clayton, North Carolina, I spotted these unusual snacks, which use that Southern treat, pickled okra. Marylynn Rich of Youngsville, North Carolina, told me that these are a favorite of hers at tailgating events. Could you call them Southern sushi rolls? Sure ’nuff.
MAKES ABOUT 60 PIECES
1 | 16-ounce jar pickled okra, drained |
10 | ounces thinly sliced ham |
1 | 8-ounce tub soft cream cheese |
EXTRA POINTS Make these snacks the night before the tailgate, and refrigerate them in an airtight container. Store them in a single layer or multiple layers separated by waxed paper to prevent sticking.
