This classic Southern salad provides Cooling refreshment when the tailgate action is heating up. I like this salad tart, but add another tablespoon of sugar if you prefer a sweeter flavor.

3 | large cucumbers |
1 | medium-size sweet onion (such as Vidalia, OSO Sweet, or Texas 1050) |
1½ | cups rice vinegar |
1 | cup cider vinegar |
3 | tablespoons sugar |
1 | teaspoon salt |
1 | tablespoon celery seed |
Freshly ground black pepper to taste |
EXTRA POINTS This is another great do-ahead recipe. You can make it the morning of the tailgate or even at the tailgate, but this salad tastes even better if made the day before serving.
