Black Bean Salsa
Delicious dip that goes well with the above chips.

Ingredients:

2 15-oz. cans drained and rinsed black beans

1 cup drained corn (or used fresh)

1 diced fresh tomato

1 diced and seeded jalapeno pepper

1 small chopped red onion

2 tsp. cumin

¼ cup lime juice
-
¼ cup chopped parsley
Directions:
1. First, toss all ingredients in a bowl except the parsley.
2. Drizzle the chopped parsley on top.
3. Lastly, chill the salad overnight.
