Salmon Cakes
Feeling lazy? Forget about shredding potatoes. Get some frozen shredded potatoes from the market instead.

Ingredients:

2 cups thawed frozen shredded potatoes

3 beaten eggs

Salt and pepper to taste

½ tsp. oregano

½ tsp. basil
-
½ tsp. lemon pepper

½ lb. cooked salmon or 3 cans of salmon

3 tbsp. chopped onions
-
¾ cup Panko breadcrumbs

½ cup fat-free mayonnaise
-
1 tbsp. sriracha sauce
Directions:
1. Once the frozen potatoes are thawed, press as much moisture out of them as possible.
2. Transfer the potatoes to a bowl.
3. Add the eggs, salt, pepper, oregano, basil, and lemon pepper and mix thoroughly.
4. Stir in the flaked salmon, onion, and breadcrumbs.
5. Create 10 crab cake patties.
6. Heat the oil in a skillet. Fry the patties 4 minutes on each side.
7. Drain on a paper towel.
8. Combine the mayonnaise and sriracha sauce for dipping.
