Mediterranean Stew
Toss this in your slow cooker and let it cook. It’s easy to make and diabetic-friendly.

Ingredients:

2 peeled and sliced carrots

1 cup green beans

8 oz. canned diced tomatoes

1 cup chopped onion

1 cup vegetable broth

¼ cup white wine

2 minced garlic cloves

½ teaspoon coriander
-
½ teaspoon ground saffron
-
¼ teaspoon paprika
-
1 cup drained cannellini beans
-
½ cup cooked small pasta shell pasta

1 cup chopped spinach
Directions:
1. Place the carrots, green beans, tomatoes, onion, broth, wine, garlic, coriander, saffron, and paprika into the slow cooker.
2. Cook on low for 8 hours.
3. Stir in the beans, cooked pasta, and spinach.
4. Cook for another ½ hour.
