Broccoli and Cauliflower Soup
This soup is creamy and comforting.

Ingredients:

1 tbsp. olive oil

1 chopped onion

3 minced garlic cloves

1 cauliflower sliced into florets

1 cup broccoli florets
-
1 large peeled and chopped carrot

3 medium potatoes, peeled and cubed

4 cups vegetable broth or more as needed

Salt and pepper to taste

2 tsp. curry powder

1 ½ cups coconut cream
-
1 ½ cups shredded cheddar cheese
Directions:
1. First, heat the olive in a large pot. Sauté the onion and garlic for 5 minutes.
2. Stir in the broccoli florets, cauliflower florets, carrot, and potatoes and cook for 5 minutes.
3. Add the broth and make sure the vegetables are covered.
4. Season with salt, pepper, and curry powder.
5. Next, bring to a boil, cover the pot, reduce the heat to a simmer, and cook for 25 minutes.
6. Stir in the coconut cream. Then, simmer for 5 minutes.
7. Then, use your immersion blender to blend to desired consistency
8. Top with shredded cheddar cheese.
