Lentil Salad

Lentils are extraordinarily healthy, and this salad is fantastic.

Ingredients:
Directions:
1. Place the lentils, carrots, onion, garlic, bay leaf, cumin, and curry in a pot. Add enough water to cover the ingredients.
2. Lower the heat. Then, simmer for 20 minutes.
3. Drain the pot and discard the bay leaf.
4. Combine the lemon juice, apple cider vinegar, parsley, celery seeds, salt, pepper, and Italian dressing in a bowl.
5. Drizzle the dressing over the rice.
6. Toss with the chopped tomato.
